Mom’s Wartime Recipes

In her letters from the siege, my Mom often included recipes and stories on what people cooked, where they found food, how they made fire. Some of her recipes are featured in my book. However, these few gems I found at the bottom of a drawer in my Mom’s home in Sarajevo, long after the war was over. They are worth looking at, especially the Fish Pate – gotta love the use of water from the fish can…

Fish Pate

Cook 7 Tsp of flour and 7 Tsp of oil until golden. Add 3 dcl of water (first use water from the fish can and then add regular water). Bring to boil and chill. Add minced fish from the can (1/2 of a large can), minced onion, vinegar, salt, pepper, mustard and rosemary.

Soy Cakes
  • 7 Tsp of soy
  • 7 Tsp of sugar
  • 2 Tsp of breadcrumbs
  • 1 Tsp of milk powder
  • 1 Tsp of cocoa

Mix with a small cup of water, form into balls and roll in coconut flakes.

Doughnuts
  • 1 kg of flour
  • 2 tsp of yeast
  • 1 cup of oil
  • 18 dkg of sugar

Make dough with warm water and leave to rise. Knead the dough and form doughnuts. Milk powder can be added to flour. (This means: if you have it, add it for sure, if you don’t, it’s “optional”)

No name for this “paste” – Mom said it served as a meal, spread on a piece of bread
  • 2 Tsp of yeast
  • 2 Tsp of breadcrumbs
  • 2 dcl of water
  • Spices: parsley, pepper, soup seasoning…
  • 5 Tsp of oil
  • Onion

Saute onion in oil. Mix yeast, breadcrumbs, spices and water until smooth. Add to the onion. Cook until dense.
